今回は熊本県天草牛深で、天然鯛をリキッドフリーザー凍眠にて液体急速冷凍と、解凍して試食と二種のテスト。
試食したのは1ヶ月半前に急速冷凍した天然鯛。
従来の冷凍方法では通常3℃くらいで解凍しないと、
身が縮むためゆっくり解凍しますが、地域によっては身の弾力を楽しむ事があるため、
この場合3℃の氷水解凍+水道水の解凍とすると、イカリ身となります。
しかし氷水使用での流水解凍であれば、
リキッドフリーザー凍眠での液体急速冷凍を行った鯛の鮮度を保つことが出来ます。
