普通の冷凍庫ならご飯はβ化してしまい、ゆっくり冷凍するとご飯は水分を失ってしまいます。
しかしリキッドフリーザー凍眠での急速冷凍の場合は、通常の冷凍の20倍ある急速冷凍の為、水分を失う前に冷凍が完了し、加熱しなくともご飯はα化します。
酢飯を使ったお寿司や加熱調理品の急速冷凍は、香りと食感が驚くほど違います。
