利尻、礼文産は旨く凍結解凍できましたが、道東ロシア産は更に身が弱く、液体凍結で急速冷凍することが難しいです。
今回は身の柔らかな牡蠣で液体凍結が出来ているため、成功しているパック方法を応用して活用して見ました。
こちらは裏からの状態です。液体冷凍時には、密着度が左右します。
道東ロシア産も非常に良い状態で急速冷凍ができて行きます。
