徳島にて 伊勢海老や生シラスの凍眠で急速冷凍テストをしてきました。
伊勢海老など甲殻類はパックしにくいので液体凍結には向いていないと、思われているかもしれませんが、パックも問題なく可能です。シラスは、非常に魚体が弱く、足も早いので生でおいしく食べれるのは1日くらいのものですが、「凍眠」することで、獲れたその日のおいしさを長期間閉じ込めます！生シラスの凍結は、特に高評価をいただいています。伊勢海老も、もちろん刺身でいけますよ。
