調味料の素となるスパイスをパウダー状に粉砕する際、熱によってフレーバーロス(風味、香りが無くなる)になるそうです。
液体窒素では高コストなので、凍眠を用いた急速冷凍でのフレーバーキープの期待が！
画像は、液体凍結後のカルダモン、ブラックペッパー、ナツメグで、これをミルで粉砕し、フレーバーチェックをしました。
フレーバーロスは全くありません！
