急速冷凍ゆえに水分とたんぱく質、脂質の分離がおきませんので品質は飛躍的に向上致します。
特にテンパリング等で表面のみ凍らせるような作業であれば、緩慢冷凍だと一晩寝かす必要がありますが、急速冷凍であれば数分で凍ってしまうのに加えてアルコール消毒に近い殺菌もできます。
柔らかすぎるとスライスが非常に難しいハムですが、液体冷凍で品質向上間違いないです。
