九州（大分、宮崎）でジビエ（鹿肉）の液体急速凍結テストを実施して参りました。
ジビエ＝野生鳥獣（鹿、猪などをはじめ多数）は野山などを駆け巡っている為、脂肪分が少なくいわゆる「赤身」です。脂肪分から赤い液体、うま味成分でもあるドリップは出ませんので、赤身が多いこの肉類は通常の冷凍をすると氷結晶が細胞を破ってしまいドリップが特に出やすいのです。そこで「凍眠」の出番です。空気凍結の約20倍のスピードで凍結することで氷結晶が小さく細胞を極力傷つけません。
