Q. We asked Director Nishimura what What prompted the introduction of the “TOMIN” Liquid Freezer
A.Dir. Nishimura used to be skeptical of frozen products, and took the stance that “it’s just frozen anyway.” He said he didn’t have high expectations for the quality of frozen products. One day, he heard rumors that there was a “good freezing technology,” and he started handling it. I was a little skeptical, but when I introduced the product to my customers, it was very highly rated. I was convinced that it was a really good product because I received “this is really good!” reviews from multiple customers to whom I introduced it. That was the product frozen with “TOMIN.”
Q. What are the benefits of using “TOMIN” Liquid Freezer?”
A.With fresh fish, the price is completely market value. Nowadays, the price at fisherman’s is pretty much known, so it’s quite difficult to do business with. However, if you can freeze it well, you can buy it when it’s cheap and put it out when there’s not much stock. There is a risk of having inventory, but you can make a certain amount of profit and offer it at a price that the other party thinks is inexpensive. It’s a benefit for both parties.
Q. Has your business changed since introducing “TOMIN”?
A.In terms of products, shrimp and seaweed in particular are completely different from conventional slow-freezing. If we freeze the Utase Shrimp we freeze at home, it will turn black, but with “TOMIN”, it will have a beautiful color. The same goes for Wakame and Mekabu Seaweed. If we take a “TOMIN” liquid freezer to places that use salted wakame or conventional slow-frozen wakame, they will definitely use it.
Q. What are your impressions of using “TOMIN” Liquid Freezer?
A.Because you freeze a large amount at once, there are times when I wish the freezer could process more capacity, but I am satisfied with the finished product.
TA Nishimura has recently started selling Ise Tuna frozen by “TOMIN” to restaurants in Tokyo, promoting the appeal of Mie. They are also trying new processed products, and are still trying to expand the range of their products.
