What prompted the introduction of the "TOMIN" Liquid Freezer?
Mr. Hicho said that he discovered “TOMIN” while searching for a way to preserve the best qualities of seasonal seafood in an ideal form. He tested the freezer and noted, “We intentionally froze fish that would normally release a lot of drips and have damaged cells with standard freezing methods.” After freezing and thawing, he was amazed: “Wow, there’s no drip!” Small fish that would normally change color and drip under standard freezing remained as fresh as they were when thawed using “TOMIN”. He realized that “TOMIN” could freeze delicate fish that typically lose flavor and restore them to a state very close to fresh, allowing him to preserve seasonal qualities. This convinced him to adopt TOMIN as a business asset.
What type of merchandise are you freezing?
The main product is bluefin tuna caught in Japanese coastal waters, particularly “high-end and expensive” ones. Mr. Hicho said, “With conventional freezing, the flavor drops from 100 points to around 70, but with TOMIN, we can store it in a state close to 100 points, just as we envision.” Due to the high praise, they focus on freezing products like tuna where there is a noticeable difference between standard freezing and “TOMIN”.
