Domestic distribution is rapidly expanding! Preparing shipments to Taiwan, Australia, London, and Vietnam

TOMIN SAKE COMPANY (Headquarters: Miyuki-cho, Takaoka City, Toyama Prefecture; President: Tatsuro Maekawa) has officially commenced shipping and sales of its “frozen raw sake” to Singapore.


Having already shipped to Taiwan in February this year, shipments to Australia, London, Vietnam, and other destinations are currently being prepared, marking the full-scale launch of overseas exports.


In Japan, frozen “Toumin” Nama-zake has been sold primarily through e-commerce sites since February 2021. Last November, sales began on the Imperial Hotel’s e-commerce site “ANoTHER IMPERIAL HOTEL,” and in December, sales of 20 varieties of frozen ‘Toumin’ Nama-zake commenced at 14 “@Frozen” frozen food specialty stores operated by Aeon Retail Co., Ltd. Store expansion will continue.


Following our participation in a food trade fair in Singapore in October 2024, we received a request from Fishmart SAKURAYA. On March 11th of this year, we shipped 400 bottles of 8 varieties of “Frozen Raw Sake” to Singapore. The response was extremely positive, leading to a reorder just two weeks later, confirming the start of full-scale shipments. Additionally, purchase requests have been received from Taiwan, Australia, London, and Vietnam, and shipments are currently being prepared.

Achieving overseas export through “freshness preservation” and “long-term storage”

Typical Japanese sake undergoes pasteurization (“hi-ire”) to maintain quality. While this process eliminates the freshly pressed flavor, it enables long-term storage. On the other hand, sake that has not undergone pasteurization is called “nama-zake” (unpasteurized sake). While popular for its freshness and vibrant character, which can only be experienced when freshly pressed, it is notoriously difficult to preserve its freshness, making long-term storage challenging. Therefore, to enjoy the freshness of freshly pressed sake, one had to visit the brewery. Amid this coin-like relationship between “freshness” and “long-term storage,” our company has succeeded in achieving both at an exceptionally high level. We do this by freezing freshly pressed raw sake using the “Tomin” (Freeze-Sleep) freezing technology developed by our group company, Technican Co., Ltd. (Headquarters: Yokohama City, Kanagawa Prefecture; President: Yoshio Yamada).


 


Conventional freezing methods required extended freezing times, posing risks of component separation and bottle breakage, making commercialization impossible. However, using Tōmin allows rapid freezing of freshly pressed sake in its bottles. It achieves nearly uniform freezing with minimal component separation and enables nearly even thawing. A key feature is the ability to enjoy the evolving aroma and taste as it thaws—from the initial thawing stage to complete thaw—as the temperature rises, it comes into contact with air, and changes occur over time. It truly evokes the sensation of awakening from “hibernation.” The freshness and delicate flavor, reminiscent of a newborn, vividly come to life with a three-dimensional quality as it thaws, developing a taste that seems to mature over time. Furthermore, it can be enjoyed from the very start of thawing, offering an unprecedented “ultra-cold sake” experience at the initial drinking temperature. Only specially frozen, unpasteurized sake treated with this cryogenic freezing process can deliver such unique flavor and temperature evolution.
